Sweet Corn Muffins

1 cup flour
1/2 cup yellow corn meal
1/2 cup sugar
1/2 cup melted butter
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup milk

Mix first 6 ingredients. Combine eggs and milk in separate bowl. Add flour mixture to egg mixture and blend well. Spoon batter into greased muffin tins, filling each cup half full. Bake at 450 degrees F for 9 to 12 minutes. Yield: 1 to 1 1/2 dozen large muffins


*You may substitute 2 tablespoons non-instant powdered milk and 1/2 cup water in place of 1/2 cup milk. Mix non-instant powdered milk with dry ingredients and 1/2 cup water with the liquid ingredients.
