Korean Beef

1 Tablespoon sesame oil
1 pound lean ground beef (or ground turkey)
3 cloves garlic, minced
1/2 cup light brown sugar
1/4 cup soy sauce
1/4 teaspoon ground ginger
Salt and pepper, to taste
1/2 to 1 teaspoon crushed red pepper flakes (depending on how spicy you like it)
2 to 3 cups cooked white rice
1 bunch green onions, diced

Heat sesame oil in a large skillet over medium heat until shimmering.  Add ground beef and minced garlic and brown until no more pink remains.  Drain off most of the fat and add brown sugar, soy sauce, ginger, salt, pepper, and crushed red pepper.  Simmer for a few minutes to blend the flavors.  Serve over steamed rice and top with green onions.  Makes 6 servings.

Tamale Pie

1 lb. hamburger or 1 can of ground beef
1 onion chopped or sub. dried onion
1 15oz can tomaties
1 12oz can corn, drained
1 Tbsp. sugar
2-3 tsp chili powder
1 1/2 c. cold milk (if using dry milk, reconsititute)
1 c. chopped green pepper (optional)
1 clove garlic, minced or sub. powdered garlic
1 6oz can tomato paste
1 15oz can olives (optional)
1 tsp salt, dash of pepper
1 1/2 c sharp cheese, grated
1/2 c. yellow corn meal
1 Tbsp. butter (powdered is ok)


Brown ground beef, green pepper, onion and garlic together. Drain the fat and add tomatoes, tomato paste, corn, olives, sugar, salt, chili powder, and pepper.

Simmer 20 minutes until thick. Add cheese and stir until melted. Pour into 9x13 inch baking dish.

Make corn meal topping by heating milk in double boiler; add 1/2 tsp salt and slowly stir in corn meal. Cook and stir until thick (about 20 min). Add butter and spread over top of meat mixture. Bake at 375 degrees F for 40 min.

Serves 8-10


*This can be made using only food storage/canned items. Substitute fresh or frozen ground beef for 1 15oz can of ground beef, and use dried onions, powdered garlic, powdered milk reconsituted, powdered cheese and powdered butter (do not try to rehydrate the butter) and omit fresh pepper.

Stuffed Bell Peppers




6 large bell peppers
1 lb ground beef
2 tablespoons finely chopped onions
1 cup cooked rice (measured dry, before cooking)
1 teaspoon salt
1 clove garlic, finely chopped
1 {15 oz} can tomato sauce {I use a can of diced tomatoes instead.}
3/4 cup shredded mozzarella cheese

Directions
Cut thin slice from stem end of each pepper. Remove seeds and membranes; rinse. Cook peppers in enough boiling water to cover for 5 minutes; drain.
Cook ground beef and onion in a skillet, stirring frequently, until beef is browned; drain. Stir in salt, garlic, cooked rice, and tomatoes or 1 cup of the tomato sauce. Heat through.


Stuff each pepper with hamburger mixture; stand upright in baking dish. Cover with foil; cook in 350 degree F oven for 45 minutes. Uncover; cook 15 minutes longer. Remove from oven and sprinkle with shredded mozzarella cheese.
*For an even healthier/money saving version use less meat and more rice or substitute the meat for brown rice. or use chicken

Mom's Lasagna

This is my mom's famous lasagna recipe. I haven't had any lasagna yet that can top it (my opinion of course)!

1/2 onion, chopped
1/4 lb. mushrooms, sliced
1 lb. ground beef
1 6oz. can tomato paste
1 8oz. can tomato sauce
1/2 tsp. oregano
1/2 tsp. basil
garlic powder to taste (or fresh garlic)
lasagna noodles (uncooked)
8 oz. cottage cheese or ricotta (add more if desired)
1/2 lb. mozzarella cheese, grated (add more if desired)
1/2 c. water

Cook onions in small amount of oil. Add mushrooms and cook until soft. Add ground beef and brown. Add tomato paste, sauce and seasonings. Place uncooked noodles in square pan coated with cooking spray. Spread with 1/2 of sauce. Place cottage cheese or ricotta over the sauce. Top with 1/2 of the grated mozzarella. Add another layer of noodles and top with remaining sauce. Pour water over all and cover with foil. Bake at 325 degrees for 1 hour 15 minutes. Add rest of cheese and let sit with foil on top for 5 to 10 minutes or until cheese melts. (This recipe doubles well to fit into a 9x13 pan).

Wheat Chili

I was pleasantly surprised at how this came out. It makes quite a bit so you may want to half the recipe or at least half the amount of wheat and water used if making for a family of two.

1-3/4 c. wheat
8 c. water

Place wheat and water in a pot and bring to boil then simmer 25 minutes. Turn off heat and let soak for 2 1/2 hours, drain water then rinse. Set aside.

1 lb. hamburger (optional)
1 onion, chopped
1 clove garlic
1 pkg onion soup (optional)
1/2 tsp. salt (add more if desired)
1 16oz. can diced tomatoes
1 15oz. can tomato sauce
1-2 cans of Kidney beans
2 tsp. chili powder
1 tsp cumin

Brown the hamburger (if using) then add the remaining ingredients, let simmer for 30 minutes. Add the wheat and mix together then pour mixture into a 9x13 baking pan and bake at 350 degrees for 30 minutes.

Spaghetti Sauce

This is my mom's recipe and it's my absolute favorite spaghetti sauce!

1 lb ground beef
1/2 onion, chopped
mushrooms, sliced
1 (15 oz.) can tomato sauce
1 tsp. basil
1 tsp. oregano
garlic powder (to taste)
dash of thyme

Cook onions in a little olive oil until soft or translucent. Add mushrooms and saute until soft. Add ground beef and brown. Pour in the tomato sauce and add the herbs; mix well. Let simmer for 5 to 10 minutes. Serve over spaghetti or angel hair pasta.

Sweet and Sour Meatballs

I used an ice cream scoop to form the meatballs. This was a big hit at our house. I will definitely make these again.

1 to 1 1/2 pounds lean ground beef

3/4 cup rolled oats
2 eggs, slightly beaten
1/2 cup finely chopped onion
1/2 cup milk
1 teaspoon salt
Few grains pepper
1 teaspoon Worcestershire sauce

Combine all ingredients; mix well. Form into about 12 balls, each about 2 inches in diameter. Place in casserole dish. Cover with sauce (below). Bake at 350 degrees F. for about 30 minutes. Makes 6 to 8 servings, 2 large meatballs each.

SAUCE
1/2 cup brown sugar
1/4 cup vinegar
1 teaspoon prepared mustard
1/4 cup barbeque sauce
1 teaspoon Worcestershire sauce

Combine ingredients and blend thoroughly. Heat and pour over meatballs.

Meatball Subs

Yields: a lot. I made 1/2 the recipe for Spencer and myself, and we had enough for 6-8 subs. Depending on how many meatballs you use for each bun. Great for feeding a large group. Or freeze left over meatballs for another meal.

Meatballs:

1 cup unseasoned bread crumbs
2 lbs Ground beef
1 C. Parmesan cheese
1/2 C milk
1/2 C beef broth, divided
1/2 C parsley
3 eggs, beaten
2 T oregano
1 T garlic, minced
1 T salt
1 T ground black pepper
2 t dried basil
1 t red pepper flakes

Mix all ingredients first, except beef (use about a little less than half the divided beef broth in the mix). Then add meat and mix well. Form golf ball-sized meatballs and place on foil lined (for easier cleanup) baking sheet. Pour a little beef broth over each one. Bake at 450 for 20 -25 minutes. The whole recipe makes about 25-30 meatballs.

Sauce:
2 can crushed tomatoes (other canned tomatoes --whole, diced, etc.-- pureed in blender work too)
Sprinkle basil, oregano, red pepper, fresh garlic minced and simmer in large pot while meat balls bake. Add cooked meatballs, and stir to coat.

Buns: Put a slice of mozzarella, provolone, swiss (whatever you prefer) on a hoagie bun and bake it at 400 for 5-6 minutes until the cheese and bun are nicely toasted. Scoop a little sauce and as many meatballs as you can fit on the bun, and enjoy this delectable wonder! You'll be wanting more as soon as you're finished with the first one... it's that good!

Pizza-in-a-Roll

As you like it -- add or change whatever pizza ingredients that you enjoy.

1 loaf frozen bread dough

1/2 cup pizza or spaghetti sauce
4 oz. pepperoni or 1/4 lb. ground beef, browned
1 onion, diced (optional)
1 green pepper, diced (optional)
Sliced olives (optional)
Sliced mushrooms (optional)
1 cup shredded cheese

Thaw bread for 2 hours. Roll out to 12x9-inch rectangle. Spread with sauce. Top with remaining ingredients. Roll up jellyroll fashion from long side. Seal edges, place on greased baking sheet, seam down. Let rise 1 hour. Make 3 slashes across the top. Bake at 375 degrees F. for 30 minutes. Slice to serve.

Porcupine Meatballs

1 1/2 pounds ground beef
1/2 cup uncooked rice
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon dry minced onion
1 tablespoon Worcestershire sauce
1 can tomato soup mixed with 1 can water

Mix first six ingredients and mold into meatballs. Drop into soup. Cover and simmer for about an hour, or until rice is tender.

Mexican Casserole

1 lb. ground beef
1 onion, diced
1 teaspoon salt
1 can chili
1 can tomato soup
Corn chips
Grated cheese

Brown ground beef and onion. Drain fat. Add salt, chili and tomato soup. Line casserole dish with corn chips. Put ground beef mixture on top. Top with grated cheese and corn chips. Bake at 400 degrees F. until hot and cheese is melted.

Beef Stroganoff

I used leftover steak cut in thin slices in place of ground beef.

1 lb. ground beef

1 onion, chopped
1 teaspoon granulated beef bouillon
1 teaspoon onion powder
1/8 teaspoon garlic powder
1 can cream of mushroom soup
1/3 soup can water
3/4 to 1 cup sour cream

Brown ground beef with onion. Add beef bouillon, onion powder, garlic powder, canned soup and water. Heat together. Add sour cream. Heat. Serve over rice or pasta. Serves 6.

Sloppy Joes

1 pound ground beef
1 onion, chopped
1 green pepper, chopped
1 rib celery, chopped
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon Worcestershire sauce
1 tablespoon mustard
2 tablespoons ketchup
2 tablespoons brown sugar
2 tablespoons white vinegar
1 (8 oz.) can tomato sauce

Brown ground beef and onion. Add rest of ingredients. Simmer 20 to 30 minutes. Serve on buns.

Sour Cream Noodle Bake

My friend Debbie brought this meal over after the birth of one of my children. It has become a family favorite.

1 (8 oz.) package medium noodles
1 pound ground beef
1 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic salt
1 (8 oz.) can tomato sauce
1 cup cottage cheese
1 cup sour cream
6 green onions - small stalk
3/4 cup shredded cheddar cheese

Cook noodles, rinse and drain.
Brown ground beef; add salt, pepper, garlic salt, and tomato sauce. Simmer 5 minutes.

*Try to have hamburger and noodles done at the same time.

Combine cottage cheese, noodles, chopped onions and sour cream.

Alternate meat and noodle mixture beginning with noodles and ending with meat. Top with cheese. Bake in a 2-quart casserole dish at 350 degrees F. for 25 to 30 minutes.

Shepherd's Pie

This meal reminds me of Halloween. It seems we would usually eat this meal before we went out trick-or-treating.

1 pound ground beef
1 onion, chopped
1 can tomato soup
1 can green beans
1 tablespoon Worcestershire sauce

Brown ground beef and onion. Add soup, green beans, and Worcestershire sauce. Put in casserole bowl. Top with mashed potatoes. Sprinkle with cheese. Bake at 350 degrees F. for about 20 minutes or until heated clear through.

Meat Loaf

I usually place 6 scrubbed and poked potatoes in the oven when I put in the meat loaf. They're cooked and ready at the same time. If there's room in the oven, I'll also put baby carrots in a separate, covered baking dish with a tablespoon of butter on top.

Combine in bowl:

3 slices soft bread broken in pieces
1 cup milk
1 egg
1 teaspoon salt
1/4 cup minced onion
1 tablespoon Worcestershire sauce

Stir together thoroughly.
Mix in: 1 1/2 pounds ground beef
Form into loaf and place in 9-inch loaf pan.
Bake 1 hour at 350 degrees F.

Enchilada Pie

This recipe is from my Aunt Donnie. She always made us feel loved.

1 pound ground beef

1 onion, chopped
1 minced garlic clove (optional)
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chili powder
1 (4 1/2 oz.) can chopped olives
1 (8 oz.) can tomato sauce
6 corn tortillas
2 cups shredded cheese (1/2 lb.)
2/3 cup water

Saute ground beef, onion, and garlic. Add seasonings, olives, and tomato sauce. In casserole dish, alternate layers of meat, tortillas, and cheese. Pour water around edge of dish. Cover. Bake 30 minutes at 400 degrees F.

Chinese Hamburger

My sister Sue gave this recipe to me when I went away to college.

1 pound ground beef

1 onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 1/2 cups warm water
1/2 cup uncooked rice
soy sauce
no salt - some pepper if desired
1 can Chinese noodles

Brown ground beef and onion together. Mix other ingredients and put in baking dish. Cover and bake at 350 degrees F. for 30 minutes. Stir. Cover top with Chinese noodles. Bake 15 minutes more, uncovered.

Chili Burritos

This recipe is from Shaula, one of my college roommates.

Brown:
1 pound ground beef
1 onion, chopped
1 teaspoon salt

Add:
1 can tomato soup
1 pkg. taco mix seasoning

Spoon into flour tortillas and roll or fold. Place in baking dish and cover with can of favorite chili. Sprinkle with 1/2 to 1 cup shredded cheddar cheese. Heat in 350 degree F. oven until hot, covered. Makes around 6 burritos.

Burger for a Bunch

While growing up this recipe was often requested by my siblings and myself for our birthday dinner. Carrying on the tradition, my children often request it for their birthday dinner. While not a real fast dinner to make, it is definitely worth the time spent.

1/2 cup instant mashed potato flakes
2 tablespoons melted butter
2 cups flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1/4 cup mayonnaise
1/3 cup butter or margarine
1/2 cup shredded cheese
1/2 cup milk

Combine 1/4 cup potato flakes with melted butter; set aside. In large mixing bowl combine 1/4 cup potato flakes, flour, cream of tartar and baking soda. Cut in butter until mixture resembles coarse crumbs. Add milk and mayonnaise; blend until a soft dough forms. Divide in half; shape into balls. Roll out one ball on floured surface to a 9-inch circle. Place on greased cookie sheet. Spread filling to within 1/2 inch of edge; sprinkle with cheese. Roll out remaining dough; place on Filling, sealing edges. Brush with milk; sprinkle with buttered potato flakes. Bake at 375 degrees F. for 20 to 25 minutes or until golden brown.

FILLING:
1 pound ground beef
1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup potato flakes
1 egg
1/4 cup ketchup
1/4 cup hamburger relish
1 tablespoon salad mustard

In large skillet, saute' ground beef, onion, salt, and pepper until browned. Add remaining ingredients; blend well.
