Potato Ham Boats

This was one of my favorite meals my college roommate Shaula would prepare when it was her turn to cook.

4 large potatoes
1/4 cup milk
2 tablespoons butter
1 egg beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups diced cooked ham
1 cup shredded cheese

Cook potatoes 50 to 60 minutes at 400 degrees F. or until tender. Cut potatoes in half lengthwise. Leaving 1/4 inch on all sides, scoop out pulp and mash with milk, butter, egg, salt, and pepper. Stir in ham, 3/4 cup cheese and spoon back into shells. Cook 20 minutes or until lightly browned. Top with remaining cheese and return to oven and heat 5 minutes longer or until cheese melts.
