Banana Bread

Great way to use up ripe bananas and not let them go to waste.

Sift together:

1 3/4 cups sifted flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt

Cream well:
1/3 cup shortening

Add gradually and continue creaming until light and fluffy:
2/3 cup sugar

Add and beat well:
2 eggs, well beaten

Add alternately with flour mixture:
1 cup mashed bananas (2 to 3)

Beat until smooth. Turn into a well-greased bread pan (8.5"x4.5") and bake 1 hour at 350 degrees F. or until bread is done. Yield: 1 loaf
